These mermaid tail cupcakes (salted caramel) are the BEST summer treats EVER! I love these things so much and so do my family and friends. These are perfect for any party or just as a treat for you.

Ingredients
  1. 1 1/2 cups all purpose flour
  2. 1 cup packed dark brown sugar
  3. 1/2 cup packed light brown sugar
  4. 1/2 cup butter
  5. 1 1/2 tsp sea salt
  6. 1 tsp baking powder
  7. 2 eggs
  8. 1 tsp vanilla extract
  9. 1/2 cup buttermilk
  10. Teal and pink fondant
  11. Sky blue & royal blue buttercream frosting in decorating bags
  12. Large decorating bag fitted with #1M open star tip
  13. Green, gold,and pink luster dust
Equipment
  1. Large mixing bowl
  2. Medium mixing bowl
  3. Hand mixer
  4. Liquid measuring cup
  5. Cupcake pan
  6. Brown cupcake liners
  7. Blue scallop wrappers
  8. Ice cream scoop
  9. Small paintbrush
  10. Small fondant rolling pin
  11. Wax paper
  12. Fondant tool
  13. Tape
  14. Whale cookie cutter
Instructions
  1. Preheat oven to 350F
  2. In a medium bowl, whisk together flour, baking powder and sea salt until well combined.
  3. In a large bowl, use a hand mixer to beat butter and sugars until light and fluffy, add eggs and vanilla extract and beat well to combine.
  4. On low speed, beat in the flour mixture until combined. add buttermilk, and mix until just combined
  5. Scoop the bater into cupcake liners and bake for 20-22 minutes or until a cake tester comes out clean
  6. Cool cupcakes completely before frosting
  7. Decoration
  8. Roll out fondant and use the whale cookie cutter to cut out shapes
  9. Use a curved fondant tool to create scales on each mermaid tail, allow tails to set for 10 minutes.
  10. Combine gold and pink luster dust and brush a little bit over all the pink tails
  11. Mix gold and green luster dust and light brush some over all of the green tails
  12. Scoop dark blue and light blue buttercream frosting into two separate decorating bags. place both bags into a larger decorating bag fitted with an open star tip.
  13. Wrap each cupcake with a blue cupcake wrapper and then frost the tops to look like waves
  14. Place mermaid tail on top of each cupcake
