Ricardo's Apple Crisp
This is my favorite recipe in the world. If you dont have time to do it in the oven, you can do this Microwave Apple Crisp recipe.

For the Filling
  1. 180 ml (3/4 cup) Cortland apple, peeled, seeded and diced (about 1 medium apple)
  2. 10 ml (2 tsp) brown sugar
For the Crumble
  1. 30 ml (2 tbsp) quick-cooking oats
  2. 15 ml (1 tbsp) brown sugar
  3. 15 ml (1 tbsp) unbleached all-purpose flour
  4. 15 ml (1 tbsp) butter, softened
Instructions
  1. In a cup, combine the apple and brown sugar.
  2. In a small bowl, combine the oats, brown sugar and flour. Add the butter and blend with your fingertips until the texture is crumbly. Sprinkle over the apple mixture. Cook in the microwave oven for 1 to 1 1/2 minute or until the juices are bubbling.
  3. Be careful, it's hot! Let cool for at least 5 minutes before serving.
Notes
  1. It is important to choose quick-cooking oats for this recipe.

Ricardo's Homemade Pizza

Ingredients
  1. 1/2 Pizza Dough recipe
  2. 1 can (28 oz/796 ml) plum tomatoes, drained and coarsely crushed
  3. 1 ball mozzarella di bufala, about 1/2 lb (250 g), shredded into pieces
  4. Olive oil
  5. Fresh basil, to taste
  6. Salt and pepper, to taste
Instructions
  1. Place a pizza stone on the grate. Preheat the grill, setting the burners to high.
  2. On a floured work surface, divide the dough into 4 pieces. Roll one piece of dough at a time to a circle about 9 inches (23 cm) in diameter. Place the rolled-out dough on a sheet of parchment paper. Cover with tomatoes and cheese. Season with salt.
  3. Place the pizza on the hot stone with the parchment paper. Close the lid and cook for 6 to 10 minutes, or until the crust is golden brown and the cheese has melted. Remove from the heat. Let rest 1 minute. Garnish with fresh basil leaves. Season with pepper. Drizzle with olive oil. Repeat with the remaining pizzas.
Notes
  1. If you don’t have fresh mozzarella on hand , use bocconcini.

Ingredients
  1. 3 cups all-purpose flour
  2. 2 tsps baking powder
  3. 1 cup unsalted butter (softened)
  4. 1 cup granulated sugar
  5. 1 tbsp grated lemon zest (freshly)
  6. 1 tsp vanilla extract
  7. 1 eggs (room temperature)
  8. 1 lb confectioners sugar (4 cups)
  9. 3 tbsps meringue powder
  10. 11/2 tsps vanilla extract
  11. 1/3 cup warm water
Instructions
  1. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Set aside.
  2. In a large bowl whisk together flour and baking powder.
  3. In the bowl of stand mixer, cream butter and sugar until fluffy. Add lemon zest, vanilla and egg and continue to beat until well blended.
  4. Add the flour mixture to the butter mixture one cup at a time until incorporated.
  5. Turn dough out onto a lightly floured surface. Separate into three smaller portions. Roll dough out to 1/4 inch thickness and cut with cookie cutters.
  6. Transfer to prepared sheet and bake for 10-12 minutes or until lightly browned. Let cool on sheet until firm then remove to wire rack to cool completely before frosting with royal icing.
Royal Icing
  1. Combine all ingredients for royal icing in the bowl of a stand mixer fitted with whisk attachment. Mix on low for one minute then high for two minutes.
  2. Transfer about 2 cups to a small bowl. Spray mixture with some water to thin out somewhat before adding gel food colors.

Ingredients
  1. 4 Tablespoons Butter
  2. 1 package (10 Ounces) Mini Marshmallows
  3. 6 cups Rice Krispies
  4. Assorted Sprinkles
  5. Small Chocolate Easter Eggs
  6. Plastic Easter Eggs
Instructions
  1. In a large saucepan, melt butter over low heat. Add marshmallows and stir until melted. Remove from heat, then add rice cereal and stir until well coated.
  2. Lightly spray interior of the plastic eggs with non-stick cooking spray. If mixture is too sticky, you can also spray your hands. Fill both sides of the plastic egg with rice cereal mixture, slightly over-filling one side. Press chocolate egg in the center on one side of the egg, then close the plastic egg to shape it. (It should be full enough to meet with a little resistance as you close it.) Gently release the rice cereal egg from the mold, decorate with your choice of sprinkles and set aside in egg crate until set.
